Hearty Sausage Casserole

ingredients
- 1 lb pork sausage
- 1⁄2 cup chopped green pepper
- 1⁄2 cup chopped sweet red pepper
- 1⁄2 cup minced onion
- 3 cups cooked rice
- 2 cups chopped peeled tomatoes
- 10 ounces frozen corn
- 1 cup shredded cheddar cheese
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 tablespoon parsley
- 1 teaspoon basil
- 1 teaspoon poultry seasoning
- 1 1⁄2 cups soft breadcrumbs
- 2 tablespoons butter, melted
directions
- Cook sausage until no longer pink; add green and red peppers and onion.
- Cook for 2 minutes.
- Add the next 9 ingredients; mix well.
- Place in greased 3 qt casserole.
- Mix crumbs and butter; sprinkle on top.
- Bake at 350* for 40 minutes.

We ate the left-overs for lunch today. Just as good warmed up as when it was first served. I found one package of my pork sausage wasn't good, so with about a 1/4 of a pound that was good I added some sliced Smoked Bratwurst to the mix. It was a great combination. Wonderful recipe! I don't know what I may have done wrong, but this came out on the bland side for me. DH and I discussed it and we'll be trying a different type of sausage next time to see if it peps it up. We might also add more Worcestershire sauce. It was tasty enough for a family dinner though and will make again.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
