Hearty Western Casserole

"This recipe comes from the Fix it and Forget It Cookbook. As written, it would not have turned out! For starters, 1hour on low did nothing to heat it. Second, it barely made 4 servings, so be warned. Third, you had way more biscuits than actual servings. But the flavor mix had potential, so that's why I'm posting it. I'd recommend playing with ingredient amounts and varied seasonings."

  • Combine browned beef, corn, beans, soup, cheese, milk, onion, and chili powder in slow cooker.
  • Cover. Cook on Low 1 hour (Cook actually on High, check now and then).
  • While cooking, preheat oven according to biscuit directions.
  • Dip biscuits in margarine then roll in cormeal.
  • Bake up to 20 minutes, checking frequently, until browned slightly.
  • Tear biscuits into pieces, top over bowls of casserole.

I am married to a beautiful wife and we have two beautiful children (ages 3 and 5). I love to cook whenever I have the chance. Problem is, so does my wife, so we wrestle over the chance often! We both work (social services with teenagers) so slow cooker recipes are common. In the summer I love to grill as often as possible. I do not usually do side dishes or desserts, my abilities with desserts especially are limited. My wife on the other hand is great with them. I love gardening, planting every spring. I focus on a variety of the easier veggies (tomatoes, okra, squash, etc.) and heavily on hot peppers (habeneros, serrano, etc.). It is "therapy" for me, working in the garden.
