  • 12 cup balsamic vinegar
  • 12 cup olive oil (extra virgin)
  • 12 teaspoon black pepper, freshly ground
  • 14 teaspoon sea salt
  • 4 cups arugula, loosely packed
  • 2 lbs heirloom tomatoes, cut into 1/4-inch-thick slices
  • 14 teaspoon black pepper, freshly ground
  • 18 teaspoon sea salt
  • 1 lb burrata cheese, quartered (or fresh mozzarella cheese)
  • 14 cup fresh basil leaf

directions

  • Whisk together first 4 ingredients to make vinaigrette.
  • Arrange arugula on 4 plates.
  • Top with tomatoes; sprinkle with 1/4 teaspoon pepper and 1/8 teaspoon salt.
  • Top with cheese.
  • Drizzle with vinaigrette, and sprinkle with basil.
