Herbed Baby Potatoes With Lemon Vinaigrette

- 1 1⁄2 lbs round baby potatoes, peeled
- coarse salt
- 1⁄4 cup extra virgin olive oil
- 2 garlic cloves, thinly sliced
- 1⁄4 teaspoon red pepper flakes
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh dill, finely choped
- 2 tablespoons fresh flat-leaf parsley, finely chopped
- 2 tablespoons of fresh mint, finely chopped
- fresh ground pepper
directions
- Place potatoes and 2 tablespoons salt in a medium saucepan.
- Cover with water, and bring to a simmer.
- Cook until knife pierces through potatoes with little resistance, about 10 minutes.
- Drain; transfer to a bowl.
- Heat oil, garlic, and red pepper flakes in a small skillet over medium-low heat until garlic is golden brown, 15 minutes.
- Pour over potatoes.
- Add lemon juices and herbs and toss.
- Season with salt and pepper.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
