Herbed Chicken Piccata

"From Cooking Light We haven't had a "bad" recipe from Cooking Light yet and this was no exception. The only change I made was that I dredged the chicken in flour instead of breadcrumbs. Hope you enjoy this as much as we did."

  • Combine first 5 ingredients in a shallow dish; set aside.
  • Place chicken between 2 sheets of heavy-duty plastic wrap; flatten to 1/4-inch thickness, using a meat mallet or rolling pin. Lightly coat both sides of chicken with cooking spray; dredge chicken in breadcrumb mixture.
  • Melt margarine in a large nonstick skillet coated with cooking spray over medium-high heat. Add chicken; cook 4 minutes on each side or until done. Remove chicken from skillet. Set aside; keep warm. Add lemon slices to skillet; sauté 30 seconds. Add broth, parsley, and lemon juice; cook 1 minute. Spoon sauce over chicken.

  2. My boyfriend and I both loved this recipe! I cut the recipe in half since I was cooking for 2, but I think that next time I will make the full amount of the breadcrumb mixture; I cut it kind of close this time. Very easy and delicious!

  4. This is such an easy recipe to make. It's also elegant and delicious and a recipe that I would use for company. This will be add to our monthly dinner rotations. Made for Fall PAC 2008.
     
  5. I won't leave an actual rating, but I thought this recipe sounded quite good and wanted to try it even though I had no chicken in the house. I made it with halibut steaks and it was not very good at all, so I don't recommend using fish. I'll keep this in my cookbook and try it again with chicken as per the recipe.

I was born in Canada, lived on Cape Cod for 13 years and then moved to Florida. While in Florida I met my wonderful German husband and moved to Germany after just knowing him for 2 weeks. My particular passion, apart from cooking, is running. I only started running about 3 years ago and am not very fast, but can't imagine my life without this sport. We both enjoy travelling, jogging, reading and cooking. We are also wine lovers and living in Germany there are lots of wine festivals - which include food galore - to attend. We love trying the local dishes and wines in the countries we travel to. We have an adorable 12 year old granddaughter (from my husbands first marriage) who loves to bake "American" muffins with me.
