Directions

  1. Cut the potatoes into thin slices only three-quarters of the way through, ensuring the slices are still attached at the base of the potato.
  2. Line a baking tray with greaseproof paper.
  3. Spray the cooking oil onto the potatoes.
  4. Sprinkle salt, pepper and rosemary sprigs.
  5. Bake in a pre-heated moderately hot oven for 50 minutes or until cooked.
  6. Remove from the oven.
  7. Push in the thinly sliced red capsicums in between the potato slices.
  8. Sprinkle the cheese over it.
  9. Bake the potatoes for another 5 minutes.
  10. Serve hot.
