  • Heat the olive oil in a small saucepan. Saute the spring onion and pepper for 3 minutes then add the mushrooms and seasoning and cook for a further 3 minutes until the mushrooms are soft. Stir in the sugocasa (or passata) and set aside.
  • Brush the sandwich toaster with a little sunflower oil, wiping off the excess with kitchen paper. Preheat the sandwich toaster to its highest setting.
  • Place one slice of bread in the toaster and cover with the tomato filling, spreading it out to fill the recesses. Place the second slice of bread on top. Slowly close the lid and cook for 3-4 minutes until browned.
