Ingredients Nutrition

  • 3 cups lettuce (any 3-lettuce blend)
  • 1 cup spinach leaves
  • 1 fuji apple
  • 14 cup reduced-fat feta cheese, crumbled (unless you can find fat free feta!)
  • 14 cup red onion, thinly sliced
  • 1 tablespoon natural almonds, recipe actually calls for All Natural Almond Accents, Original Oven Roasted
  • 1 dash fresh ground black pepper (optional)
  • 1 teaspoon light balsamic vinaigrette salad dressing (or any low-cal dressing)

Directions

  1. Cut apple into quarters and remove the core, seeds, and stem. Thinly slice, and then cut the slices in half widthwise.
  2. Toss together all ingredients except the almonds. Plate (or "bowl") your salad, and then sprinkle almonds evenly on top. You can add some pepper and/or dressing if you like, but this salad's so flavorful you may not even need 'em. Enjoy!
