  • 1 (5 ounce) chicken cutlets, boneless, skinless, breast
  • 1 piece Laughing Cow light swiss cheese, room temperature
  • 1 ounce fat-free ham, about 3 slices
  • salt and black pepper, to taste

  • Preheat oven to 350 degrees.
  • Put chicken in a large sealable plastic bag, squeeze out as much air as you can, and seal. Using a meat tenderizer or a can, carefully pound chicken through the bag until it is about 1/4-inch thick. Remove chicken from the bag, and season to taste with salt and pepper on both sides.
  • Lay the chicken flat and spread the cheese wedge over it. Evenly layer the ham slices on top of the cheese. Starting with one of the longer sides (or any side, if it's square), tightly roll up the chicken breast cutlet, and secure with toothpicks.
  • Place chicken roll in a baking dish lined with foil and/or sprayed with nonstick spray, and then cover the baking dish with foil.
  • Bake in the oven for 20 minutes. Carefully remove the foil covering the dish. Continue to bake (uncovered) for an additional 15 minutes, or until chicken is cooked through. Enjoy!

  1. Loved it! No need to tell anyone that this is a "healthy" entree. When I make it again, I will sprinkle the tops with paprika and sliced green onions before serving, to make it a bit more appealing to the eye. Thanks for sharing!
     
  2. I made this the other night, but didn't realize it was an actual HG recipe. My husband and I really liked this. I didn't salt/pepper it either, and it doesn't need it. The only thing that might make people question this at all is the texture of the laughing cow swiss cheese. It is spreadable, so it does not bake up like a normal slice of cheese would (it's more like ricotta cheese, texture-wise). Taste-wise, though, this is great. I served this with steamed veggies. Thanks for posting it!
     
  3. My family loved this! I used 4 chicken breasts, 4 wedges of Light Laughing Cow cheese and 98% fat-free ham. It was delicious! And I even forgot to salt and pepper it. Didn't need it. I served this with some fresh steamed broccoli. Next time I might even serve with a little brown mustard. Yum! Love Hungry Girl!
