The batch made 9 muffins which I baked for exactly 28 minutes. I calculated the points and they are 2 points for each muffin. :-)"

  • Preheat oven to 350 degrees.
  • In a large bowl, combine both types of flour, Splenda, baking powder, salt, and cinnamon (in other words, all dry ingredients).
  • In a separate bowl, mix together the mashed bananas, egg substitute, applesauce and vanilla extract (all the wet ingredients).
  • Add this mixture to the bowl with the dry ingredients, and stir until just blended.
  • Spoon batter into a large loaf pan (about 9" X 5") sprayed with nonstick spray.
  • Bake for about 50 minutes, or until a knife inserted in the middle comes out clean.
  • Allow to cool slightly, and then cut into 8 slices.
  • If you like, spritz with some spray butter or spread on some Cool Whip Free.
  • UPDATE: For muffins - prepare 9 muffin cups. Bake for 28 minutes.

  1. Heavy bread, not as good as other whole wheat/splenda recipes on recipezaar. I would not even know where to begin to adjust this recipe. Tastes like a diet food, which to my mind, is a bland version of something that should be great. Even toasted it does not improve.
     
  2. A big serving of banana bread for 2 points? WoW! This bread was great. It has a moist, dense texture. It didn't rise too much for me, next time I'm going to try the muffins. A great breakfast food idea. The taste alone is worth 5 stars. Thanks
