Highland Squares

"My mom used to make these all the time for an afterschool snack, but she got it from a 1930's church cookbook. The basic recipe makes a nice simple sweet when eaten alone, but the possibilities are endless. I've mixed in chocolate chips, or dried fruit to make more of a granola bar. It is also nice served warm with ice cream."

  • Preheat oven to 350.
  • In a medium sized microwave safe bowl, melt butter.
  • Mix in brown sugar.
  • Add oatmeal, salt and baking powder.
  • Press into an 8x8 baking dish.
  • Bake for 15 - 20 minutes.
  • Let cool before cutting into squares.

  1. Tried these this morning with just the addition of 2/3 pecan pieces. They were so good I had to throw them away for fear of eating the entire batch. When the main ingredients are butter and sugar what's not to love. Thanks, I will make it again but this time when I have someone to share it with.
