- 125 g butter
- 1 teaspoon cocoa
- 125 g sugar
- 1 cup mixed fruit
- 100 g glace red cherries
- 1 egg, beaten
- 250 g biscuits, crushed
- 1 teaspoon vanilla
- 2 cups icing sugar
- 50 g butter
- 1 lemon, juice and zest of
directions
- Place butter, cocoa and mixed fruit in a saucepan and bring to the boil over a moderate heat.
- Add the egg whilst whisking and boil for another two minutes.
- Remove pan from the heat and add biscuits, vanilla and halved cherries.
- Press mixture into a lamington tin and let cool.
- Mix together the icing sugar, melted butter and lemon zest, add enough juice to make a smooth icing, spread over the slice then chill.

i live in sydney and i simply love to bake - i'll need another lifetime at the very least to cook all the things i want to...sigh...i am trying to wade through all the recipes i have earmarked.
i do like taking on the challenge of trying to find recipes which are kind to allergy sufferers and try to make things which will not make them stand out in the crowd.
