Hipquest's Baked Potatoes

  • Preheat oven to 425 Fahrenheit.
  • Wash potatoes and pat dry.
  • Pour oil in one gallon size baggie or use a bowl.
  • Pour Kosher salt into another gallon baggie or use a bowl.
  • Put 1 potato into the oil bag to coat lightly, then into the salt bag to coat lightly but completely-DO NOT pierce potato.
  • Repeat above with remaining potatoes.
  • Place directly on oven rack and bake 1 to 1 1/2 hours, test by a light squeeze after 1 hour.
  • Remove from oven, brush off salt, serve whole-split down the center or cut in half for 8 portions.
  • Squeeze to "fluff".
  • Add whatever ingredients you like on a baked potato.

  1. This produced *perfectly* done potatoes. I like that it's so simple, but the recipe calls for a lot of salt, and even after brushing as much off as I could, they were still a bit too salty for me... my fiance and our roomie, however, thought they were perfect. :) Thanks for sharing!
     
  2. I was a bit worried about not piercing the potatoes but shouldn't have been. They were done to perfection. I placed a pan on a lower rack in the oven to catch any salt that came loose from the potatoes. Made for I REDommend Tag Game.
     
  3. The pefect potato! I loved the cripsy outside and I didn'e even have to add salt, I just used some from the skin. The Baked Vidalia Onion added a ton of flavor too. Great recipe and thanks for the onion recommendation too!
     
  4. Excellent fluffy potatoes! I cooked 4 about 1.5 hours for perfectly crispy outsides and fluffy insides. After splitting them down the middle I topped them with a little butter and Recipe #262590 for the ultimate side dish with grilled steak! Made and reviewed for Fall PAC 2008.

Update: September 14, 2008 DH and I placed 3rd in the Rib division at Blues, Brews and BBQ in Charlotte, NC. Not bad for our 1st competition! But, I gained the best BBQ, blue crabs and my husband(Mr. 4th of July, who still thinks all the fireworks are JUST for him! :) ). I've always wanted to cook. My earliest memory is being put into my NaNa's (very deep) sink. I was "involved" but not able to trip any of the cook's in the kitchen. ;0 My husband fell in love with my ability to cook-southern, haute cuisine (and anything in between) and on "the fly". It's not always perfect but I try. I can turn any leftover into an edible, usually very good, meal-all thanks to my grandmothers and mother's lessons. If you leave our house hungry I have failed as a host. I love to cook (of course); the Carolina Panthers, Georgia Bulldogs and Appalachain State-I am football crazy; Being on the water on our sailboat or jet skis; Eating, entertaining and wine.
