  • Cut chicken breasts into bite-size pieces.
  • Combine sugar, ginger, soy sauce, and garlic in bowl.
  • Mix in chicken and let stand 20 minutes, stirring occasionally.
  • Heat oil in wok on high heat.
  • Add walnuts, stir fry for 1 minute, then remove walnuts from wok and set aside.
  • Add marinated chicken mixture to hot oil. Cook 5 minutes, stirring occasionally.
  • Mix in bamboo shoots.
  • Blend cornstarch and water and add to wok, stirring until thick.
  • Simmer 2 minutes longer, then mix in walnuts.
  • Serve over rice.
