Hole in One Potatoes

"Potatoes baked with a core of bacon and scallion. You will have great fun experimenting with this recipe. I have made them using fresh herbs, garlic slivers and grated cheese. (Added post review) Some of the newer apple corers are much larger. Mine is made by OXO."

  • Preheat oven or covered BBQ grill to 350°F.
  • Wash potatoes and cut a thin slice off each end.
  • Plunge an apple corer through one cut end (lengthwise) as far as it will go, twist and remove.
  • Sprinkle bacon with pepper, top with a scallion"tail" and fold the bacon over the scallion.
  • Insert into the potato, packing in the bacon and scallion with a finger, trim if necessary to leave room at both ends for a"plug".
  • Cut slices off the potato cores, wide enough to plug the holes, when the slices are turned sideways.
  • Plug both ends of the potatoes, wrap in foil and bake 50- 60 minutes or until done.

  1. I did not find this recipe to be all that good. The apple corer does not make a very big hole and I barely had enough room to put the bacon in let alone the scallions and cheese. I think it would work better if you used something larger than an apple corer. I won't be making this again.
     
  2. I really had fun with this recipe, made sure to find smallish, round potatoes and had no trouble coring them out with my apple corer - a little more trouble stuffing them! Also when before putting in the oven I rubbed the skin with olive oil and salt n peppered heavily. It was a 5 star rating just to see DH's face when he cut into this. Made for I Recommend Tag 2012
     
  3. What a super idea! My family loved them. For my first try, I did bacon and sharp cheddar cheese. The oils in the cheese and bacon made the potato beautifully moist. The combinations are endless. Thanks for a real keeper!
     
  4. WOW! My mother adores twice baked potatoes, so I took this general idea and ran with it. I stuffed it with chedder cheese, extra potato pulp, scallions, and ham. Such and awesome idea! I made my hole pretty big tho, cut into it about 2-3 times to make a large hole. Great recipe, cant wait to make it again with other stuffings, spinach is next!
     
  5. Most excellent!! :) I am going to have a LOT of fun with this recipe! I can't wait to try different fillings! I did one as the recipe stated , and one with bacon and cheese ... I want to try Chili as the next one! Thanks for a great recipe , a really FUN side dish! :)
