  • Whisk eggs, yolks, sugar, and salt in heavy sauce pan (off heat).
  • Stir in milk, 1/2 cup at a time, blending well after each addition.
  • Heat slowly over lowest possible heat until custard registers 160 degrees on instant read thermometer, thickens, and coats back of spoon.
  • 25-30 minutes.
  • Pour custard through sieve into a large bowl.
  • stir in liquor, vanilla, grated nutmeg.
  • cover with plastic and refrigerate until well chilled.
  • Just before serving whip cream in medium bowl to very soft peaks and gently fold into custard mixture until incorporated.
  • Serve in chilled cups and garnish with nutmeg.

  1. I just watched an episode of America's Test Kitchen. They made this recipe but they only cooked it for 2 to 5 minutes, not 25 to 30 minutes. Just until it got to temp. I just wanted to let you know about this. Thanks so much.

  1. I am addicted... cant... stop... drinking... Made without Rum I usually hate egg nog. I guess it just has to be homemade. Leftovers make a WONDERFUL ICE CREAM. Yummy

  3. Soooo good! I used spiced rum and served it to friends I had over. Everyone really liked it. I ended up using skim milk and although I am sure it was not as thick as it might have been with whole milk, I thought it was amazing. Thanks for posting this!
     
  4. This is delicious. DEFINITELY use the thermometer. I could not find mine and figured since I am an experienced cook, I could eyeball it. Nope....it went a second too long and curdled. I fixed it by using my hand blender and it was silky smooth in seconds. I am not decreasing the rating, because the curdling was my fault, not the recipes. Next time I will use the thermometer. However, it is really rich and delicious and definitely better than what you buy at the store. For a once a year Christmas Treat it is worth making and will not buy store bought again.
     
  5. This was so yummy! I did not use alcohol in mine and it tasted great. Flavor was similar to what you buy in the stores, but my husband thought the texture was better and I liked that it doesn't have all the additives.

What to say about me. I have traveled Europe and Turkey extensively and found that my favorite meals were in the Mediteranian. But I love a good all American BBQ. Life is an adventure and I live it to the fullest. Nothing is too trivial to enjoy or too big to take on. I had a Liver transplant Sept 21, 2001 that was very sucessful. It was a happy time when I was back to cooking more often. Actually getting back to living more often!!! I love cooking for large groups which is rare these days. Cooking is great therapy. I cook even when no one is hungry and I have to save it for later! I LOVE cookbooks. Just about any kind. I end up with a stack of them next to my bed because I browse through them before I go to sleep looking for ideas for the next day or so.
