- 2 (20 ounce) packages frozen whole strawberries
- 1 lb fresh cranberries or 1 lb frozen cranberries
- 5 lbs sugar
- 2 (3 ounce) envelopes liquid fruit pectin
directions
- Grind strawberries and cranberries in a food processor or grinder; place in a large kettle. Add sugar. Bring to a full rolling boil; boil for 1 minute. Stir in pectin; reutrn to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from the heat. Cool for 5 minutes, skim of foam. Immediately pour into hot jars, leaving 1/4 inch headspace. Adjust caps. Process for 15 minutes in a boiling water bath.

I could only locate 16 oz. pkgs of frozen strawberries and 12 oz. pkgs. of fresh cranberries so I had to buy extra and weigh ingredients. It is very tasty with just the right amount of tart. I added one teaspoon of margarine to reduce the foam and did not need to skim or allow to cool. Definite keeper!
