Holiday Morning French Toast

"This is great for a breakfast or brunch. Fixed the night before and popped in the oven in the morning while you are busy with other things. Prep time does not include refrigeration time."

  • Combine brown sugar, butter, and 1 teaspoon cinnamon. Add apples and raisins, toss to coat well.
  • Spread apple mixture evenly over bottom of 13x9-inch pan. Arrange slices of bread on top.
  • Mix eggs, milk, vanilla, and remaining cinnamon until well blended. Pour over bread, soaking bread completely.
  • Cover and refrigerate 4 to 24 hours.
  • Bake, covered with aluminum foil, in a preheated 375° oven for 40 minutes. Uncover and bake 5 minutes. Remove from oven; let stand 5 minutes. Serve warm.
  • For an eye-catching presentation, loosen edges of baking dish and invert onto a large serving platter.

I love the convenience of making French toast casseroles the night before and popping them in the oven in the morning for a quick breakfast.We loved the addition of the apple/ brown sugar layer in this one. I used Golden Delicious apples and because my family doesn't care for raisins, I left them out. Also, I had to bake the casserole about 10-15 mins. after removing the foil to get the egg mixture done and the bread nice and crispy. Thank you for sharing this wonderful recipe...it is definitely a keeper!!<br/>*Made for 2010 Football Pool*
     
  2. 2012 Thanksgiving is the third holiday my family will enjoy this.<br/>Many different ways to personalize: I mixed some craisins in w/ golden raisins, and added abt 1/2 c chopped, toasted pecans.<br/>Soaking for at least four hours truly is important.<br/>This travels well, also. Cook for the 40 minutes or until firm. Let cool, cover, and go to Grandma's. Pre heat oven, uncover, and heat until bread is toasty around the edges.<br/>Happy Thanksgiving! (Or Black Friday morning!)
     
  3. We had breakfast for supper tonight and really enjoyed the french toast! I put this together the night before and refrigerated. My granny smith apples were small so I used 6 and could have used more of the milk and egg mixture. Next time I would use less raisins or none at all for our taste. The french toast was nice and crispy around the edges and soft and tender in the middle. Topped with a pat of butter and a bit of maple syrup. A dusting of powder sugar would be nice too. Very nice casserole, thank you ElaineAnn!
     
  4. Absolutely wonderful! I put this together last night in a 3 serving size. Now DH and DS are whining because they ate it all. Try explaining to men that it's Christmas and there is really no room in the fridge for leftovers. It's so nice to be able to just slide it into the oven and start the coffee. This is so easy and it's really something special. Mine baked up nice and fluffy but I did need to use a bit more milk than ask for. My guys say Thank You to ElaineAnn (and so do I!)
