- 2 cups roasted red peppers, peeled and seeded, diced small
- 6 ounces chevre cheese
- 16 ounces cream cheese
- 1⁄2 cup shallot, minced
- 2 tablespoons garlic, minced
- 1⁄2 cup fresh cilantro
- 1⁄4 cup lime juice
- 1 cup yogurt
directions
- Puree roasted red bell peppers. Mix cheeses until soft. Gradually combine all ingredients until completely incorporated with cheese.
- Chill until firm and serve with crackers or rustic bread.
