  • In a small saute pan, melt butter and add cayenne, cinnamon, honey and salt.
  • Mix together and add nuts. Cook over medium heat until nuts are lightly roasted.
  • Remove from heat and let cool, stirring occasionally to keep nuts from sticking together. (Can be made a day or two in advance.).
  • In a large bowl, mix greens, fruit, onion, cheese, and nuts.
  • Toss with Cranberry Salad Dressing (posted recipe) prior to serving.
  • Garnish with pomegranate seeds if desired.
  • Everyday version: toasted walnuts, any choice of greens, red onion, Gorgonzola cheese, Cranberry Salad Dressing.

I'm a full time office professional and my husband has his own home-based business. We both come from small town backgrounds and people who were fairly self-sufficient. We moved to Vashon to have the best of both worlds- close to Seattle yet still rural. We have 5 acres and always hope to do more gardening that we actually get done. Our biggest gardening focus is on fruits and vegetables (assuming the deer don't get everything)- so this informs much of our cooking adventures. I love literature, music and theater.
