  • Marinate the chicken in lemon juice and garlic for 15 minutes.
  • Combine the cornstarch, broth, syrup, lemon zest and second amount of juice; st aside.
  • Cook chicken in skillet in half the oil until no longer pink; remove from pan and set aside.
  • Add remaining oil to pan and stir-fry the broccoli and red pepper for 2 - 3 minutes.
  • Stir the sauce mixture and pour it into the pan.
  • Bring to a boil, stirring constantly then add the chicken.
  • Boil 1 minute and serve over rice.

  1. Very nice! Fresh and zesty, the sauce was lovely. It was so quick to make too. We don't get corn syrup here so I used 2 dessert spoons of sugar instead, I think it would have been even better with honey, but I had none on hand. Next time I think I'll use two cloves of garlic because I just love garlic. My toddler ate it enthusiatically, but I only gave it four stars instead of 5 because my husband said it was just 'okay'. Thank you very much for this recipe, I will be adding it to my regular weekday menu.
     
  2. This was very, very good. It had a light, fresh flavor that wasn't overly sweet, and I can see that it's going to be a very versatile recipe. The only thing I did differently the first time I made it was to cook the chicken in part sesame oil and part canola oil, and topped the chicken with some thinly slice green onion. I served this over some sesame rice. I might add some peas or celery next time. And I promise you that there will be a next time! Thanks so much for posting!

I live in a coastal town in the southwestern corner of BC. From my living room window I can look across the water to the USA. The town is also a suburb of Vancouver so have the water at my front window and the moutains at my back. From the balcony I have a view of Mount Baker which is beatiful. <br>I am retired from the airlines so have a lot of time to shop and do hobbies. I enjoy watching the food channel on TV, and can even watch Gordon Ramsey with his language. But I also like meals that are easy to prepare. I do wish there were more truly lactose free recipes available, most that I have found include ingredients that contain milk ie: mayonaise. <br>I almost never stay to a recipe after the first try - have to add my own touch. However, I do the recipe without changes (except for the sodium and saturated fat levels in some cases) the first time, out of respect for the chef, there may be subtle flavours that are not too apparent. <br>I am also a committed singer and belong to two choirs, I also love singing the music from the old musicals though have never done that for the public. <br><img src=http://i23.photobucket.com/albums/b399/susied214/permanent%20collection/adoptedspring08.jpg>
