Homemade Corn Tortillas

"My friend, Connie invited us over for tacos one day and to my surprise, she was making tortillas from scratch. They probably aren't "authentic" as one reviewer suggested, but this is the way she does it. It was impressive anyway!"

  • Using electric mixer, mix all ingredients together.
  • Heat griddle to medium heat.
  • Spray griddle with mist of oil.
  • Using 1/2 cup measuring cup, fill about 2/3 full with batter.
  • Spread batter out onto griddle with spoon.
  • Cook 2 minutes on each side.

  1. We love these, authentic or not! They taste great and make a delicious wrap for fillings. These are also the way my MIL makes them, so hubby loves when we make these. They are easy to do on a griddle and don't take all that long to make. Thank You!
     
  2. These are easy to make, which is nice, but these are NOT real corn tortillas. They taste just fine, but if you want real corn tortillas look elsewhere: you have to buy special masa harina, which is simply mixed with water and rolled. Don't expect an authentic Mexican food taste!
     
  3. I didn't know WHAT I was doing so I can't really make a rating. The only thing I can really say (probably my fault) is that they came out thick and eggy-more like pancakes than anything.
     
  4. Very easy and very popular with the kids and much cheaper than the store-bought variety. My kind of recipe.
     
  5. These were so easy and great for the enchiladas I needed them for. I can't buy corn tortillas here and this did the job. They did turn out more like crepes, I'm not sure how to get them to be more taco like. But for enchiladas they were great. Thanks!

I am a special education teacher for the birth to three crowd! I love my job! My husband and I have 4 teenage daughters. He is so great--he keeps the 5 of us in balance..which isn't always the easiest job in the world! My picture came about while I was in college a few years ago. I was going crazy with tons of homework but felt compelled to make the family breakfast. I wasn't paying any attention to what I was doing and when I looked down, the eggs were smiling up at me! For some reason, I just love that picture and I don't really want to change it to a photo of myself. Biggest pet peeve: Tangled hangars! You try to get just one hangar and 3 more will somehow twist themselves around the one you want! I am very allergic to onions--I do not breathe them, eat them or touch them if I can help it. Sometimes I feel like we are an onion obcessed society! Start looking at labels! You would be surprised at how many boxes and packages contain onion in some form. That's okay....I make most things from scratch--which is probably better anyway.
