Homemade Granola Bars

"My 2 year old's eating habits are sporadic at best, so I try to make sure the things he DOES eat are on the healthy side. Both he and my husband love these, they are very portable, and they are cheaper than store bought. Best of all, I can vary the ingredients to my own taste."

  1. Thank you, thank you, thank you! I've been searching for a healthy snack for my carb-loving husband and this is perfect! Finally... a granola bar with no oil or butter, and it really is yummy. It stayed together just fine for me, though it was a little hard to cut, so we ended up with "slabs" of granola instead of bars (LOL!) I used 2/3 C sunflower seeds instead of the nuts and sesame seeds, added 1/3 C flaked coconut, and used a non-hydrogenated peanut butter to make it a little better for 'you-know-who' because he needs to reduce his cholesterol. Even the kids are enjoying these! I'm so thrilled to be able to make them a healthy snack they can enjoy. Thanks again, PetitFour!

  2. these are great. I added dried cranberries, a handful of coconut and a few chocolate chips. Since I used a natural peanut butter, it didn't really melt, just softened (which may have been why one reviewer's bars wouldn't stick together) so I poured a little orange juice (maybe 1/4 cup) over the mixture and it stuck together fine.

  3. Liked but didn't love these. I replaced half the brown sugar with brown rice syrup and had no problem with crumbly-ness. But as a result they lacked flavor; maybe it was a loss of sweetness. I like the basis of the recipe and will experiment. UPDATE: I just couldn't make these work for me. I tried using half brown sugar and 1/2 honey to get a sweeter flavor, but we didnt' like them. Sorry!

  4. I haven't made these, but to correct the crumble factor, how about using honey, Lyle's Golden Syrup, or better yet, agave nectar instead of the brown sugar? All these sweeteners are sticky and I would think help to hold the ingredients together. If using agave nectar, use only 1/3 cup or so, because it is very sweet. Heat it together with the peanut butter.

  5. I like the taste and crunch of this recipe, but I too had trouble with keeping it to stick together. It was very crumbly. Any suggestions?
