Homemade Mac & Cheese

  • In a large saucepan or pot (you will need extra room in it) bring the water and the bouillon cubes to a boil.
  • Add the pasta and let it cook until al dente.
  • Strain the pasta, but it does not need to be overly-dried.
  • Dump out the water and replace the pasta in the bowl, and set aside covered.
  • Saute bacon and onion until the bacon is crispy and the onion has caramelized.
  • Dice the bacon into small pieces.
  • Add the onion and the bacon into the pot with the pasta and mix together.
  • Add the yogurt and the milk to the pot, and mix together.
  • Heat the mixture on low, stirring constantly. You do not want the pasta to burn.
  • Add spices to taste and keep stirring.
  • Turn up the heat to medium and while stirring, add the cheese.
  • Keep stirring until the cheese is completely melted.
  • Enjoy hot straight away.
