“Lean turkey sausage links spice up this hearty sauce that turns pasta into a splendid main dish. You can blend the sauce so there are no chunks of vegetables. Each serving is 1 cup sauce and 1/2 spaghetti. Diabetic Exchanges: 2 starch, 2 vegetables, 1 lean meat. This came from Taste Of Home. I have not tried this, just posting for safe keeping.”

  1. In a dutch oven, combine the celery, onion, green pepper and 1 cup water. Bring to a boil. Reduce heat to medium; cook, uncovered, for 10-12 minutes or until vegetables are tender and water is reduced.
  2. Crumble sausage over vegetable mixture; cook until meat is no longer pink. Stir in the tomato sauce, tomatoes, tomato paste, parsley, garlic, italian seasoning, sugar, salt, pepper and remaining water.
  3. Bring to a boil. Reduce heat; simmer, uncovered, for 45-50 minutes, stirring occasionally. Serve over spaghetti. Garnish with Parmesan cheese if desired.
