Homemade Watermelon Ice Cream

"This ice cream is so fluffy and light, and not overly sweet. If you are wondering why the vodka is necessary, it is because watermelon has a high water content which tends to ice up in the freezer. Since the vodka has a high alcohol content, it displaces the ice crystals so that the whole mixture doesn’t turn into a solid block of ice once it’s left in the freezer to ripen. When you pull it out of the freezer, if there is any left to put into the freezer, be assured you will need to let it thaw some before you will be able to scoop some out. Again, this is due to the water content."

  • Remove the black seeds from the cubes if needed. Puree the watermelon cubes. Press the watermelon puree through a sieve to remove any chunks or seeds. Add the remaining ingredients and whisk until the sugar is fully incorporated. Put into your ice cream maker and follow manufacturer’s instructions.

  1. Food professionals should be able to give recipe amounts by weight. What is a "cup of watermelon cubes"??
     
  2. Is the idea to use the pulp and not the juice in this recipe? Also, I've seen vodka or another alcohol in this and other ice cream recipes. Does this help cut down on iciness (sp?)
     
  3. I was looking for a watermelon ice cream recipe that I can feed my grandkids I was thinking if you put vodka in it you can't give it to you bring kids do you have anything else I can do? And also why do you have to freeze watermelon?

  1. This made a really nice watermelon ice cream. Super easy to make. I made it exactly as directed but It was still a little on the icy side so I had to add more vodka. And it only made two quarts, not a whole gallon. Would definitely make again, thanks for a fun and delicious recipe
     
  2. I may or may not sit here w/my soon & finish it all without sharing. I did tweak mine: since I drained the liquid into a pitcher (3c worth), I added more another 2c watermelon (before draining it). And, I didn't want to go to the store so I used some lemon rum instead. Can't taste it, & the alcohol content was similar. It wasn't icy at all.
     
  3. I made this, this past weekend for a large benefit. I was a HUGE success. I made it for the most part exactly as the recipe stated. I tweeted it a bit. I doubled the recipe and used 3 shots is Smirnoff' watermelon vodka. After reading the other reviews and they said the watermelon was on the icey side. I did as the direction stated and then I place the watermelon pulp in a clean towel and twisted and squeezed the moisture out of the pulp and then added to the ice cream mix. It turned out fine and the watermelon perfect. I have another event coming up and plan on making it again for it.

Tweaks

  1. Instead of vodka, I used 4 tablespoons of bitters and it made the smoothest, creamiest ice cream and really brought a punch to the watermelon flavor. I froze rounded scoops of the ice cream and served them in dessert glasses with ginger ale. Divine!
