Honey and Chili Beef With Beans

- 2 tablespoons oil
- 500 g ground beef
- 1 red capsicum, cut into strips
- 1 green capsicum, cut into strips
- 2 garlic cloves, crushed
- 2 red chilies, chopped
- 2 teaspoons grated fresh ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground paprika
- 1 cup beef stock
- 1⁄2 cup tomato paste
- 1⁄3 cup honey
- 1⁄3 cup white vinegar
- 2 tablespoons soy sauce
- 440 g white beans
directions
- Fry the beef in the oil until well browned.
- Add onion, capsicum, garlic, chillies, ginger, cumin and paprika and cook for 2 minutes.
- Add stock, tomato paste, honey vinegar and soy sauce. Bring to the boil, reduce heat and simmer, covered for 10 minutes.
- Add drained white beans and cook for a further 10 minutes or until mixture has reduced and thickened.
