Honey Bran Blueberry Muffins

"I don't know where I found this recipe but I have been making these for years and they always taste delicious. There are a couple of other honey bran muffins recipes on this site but this has some slight variation. The original recipe called for 1 cup of raisins but I like blueberries better."

  • Grease muffin tin or use muffin cups. Combine milk and lemon juice, set aside.
  • Beat egg in mixing bowl with a fork; blend in oil, honey, soured milk and vanilla. Stir in cereal and blueberries; set aside.
  • Combine remaining dry ingredients in another bowl. Stir liquid ingredients into dry ingredients. Spoon batter into muffin cups,filling to the top. Bake at 400°F for 15 minutes. Makes about 10-12 muffins.

  1. I love bran muffins and I love blueberry muffins but never would have thought to combine them. They combine deliciously! I made the recipe exactly as stated and got 12 nice size muffins.
     
  2. DELICIOUS! For those who are looking for a truly delicious and healthy muffin, this is it. It is not very sweet, but just enough to bring out the blueberry flavor. I made a few changes. I used 3/4 cup wheat germ and 3/4 cup rolled oats in place of the 1 1/2 cups cereal. Also, instead of using only white flour I used 3/4 cup whole wheat and 3/4 cup white. Also, I used melted butter instead of veggie oil and I never use baking powder so I just put in 1 1/2 teaspoons baking soda and skipped the powder. And last of all, I used real buttermilk instead of making a substitute w/ vinegar. Cooking time was right on target. Will make again!!!!
     
  3. These muffins are amazing. I made these today for the "My Three Chefs" game, where I am cooking recipes submitted by "bunny" chefs. I didn't have any all-bran cereal, so I just used plain wheat bran. I wasn't really sure if I could do that, but it worked out mighty fine. I was just about done with these when I realized my fine children had eaten all the blueberries that I had frozen from this season. Grrrr.....what a quandry. I couldn' find an acceptable subsitute so I sent my oldest daughter to the store to buy some frozen berries. I am so glad that I did, because they are soooooo goooood. Thanks for posting this great recipe.
