  • Preheat oven to 325 and take egg and butter out from fridge.
  • Combine oats, flour, flaxseed, nuts, and dates in a large bowl.
  • Beat egg and add. Mix thoroughly.
  • Melt butter, sugar, and honey in saucepan over low heat. Allow to cool a bit, then add slowly to ingredients in other bowl while mixing thoroughly.
  • Fill mini muffin tins, smashing down just below surface level with back of spoon so they're tightly compacted.
  • Bake 9-12 min until browned and chewy.
