Honey Garlic Grilled Chicken Sandwich With Creamy Coleslaw

- 1 cup carrot, coarsely grated
- 3⁄4 cup savoy cabbage, thinly sliced
- 1⁄4 cup red onion, thinly sliced
- 3 tablespoons ranch dressing (I prefer Sensations by Compliments Three Cheese )
- 3 tbsp.flat-leaf parsley, finely chopped
- 1⁄2 lemon, juiced
- 1⁄2 teaspoon salt, divided
- 1⁄2 teaspoon pepper, divided
- 4 thin buns
- 4 boneless skinless chicken breasts, sliced in half lengthwise
- 1 tablespoon olive oil
- 1⁄4 cup honey garlic barbecue sauce
directions
- Heat barbecue to medium. In a large bowl, mix the carrot, cabbage, onion , ranch dressing, parsley, lemon juice and 1/4 teaspoons each salt and pepper. Separate bun halves and set aside.
- Place the chicken pieces in a shallow bowl with the olive oil and the remaining salt and pepper and turn to coat. Grill the chicken until cookd through, approximately 3-4 minutes per side. On final turn, brush chicken with barbecue sauce on both sides.
- Meanwhile, lightly grill the buns. Divide the chicken among the 4 buns and top with the coleslaw.
