Honey Glazed Carrots

  • 1 lb carrot, peeled and thickly sliced or cut with a rolling cut into 3/4 inch pieces
  • 2 tablespoons unsalted butter
  • 1 large shallot, minced (about 2 tablespoons)
  • 18 teaspoon salt
  • 18 teaspoon pepper
  • 1 tablespoon honey

  • In a heavy medium saucepan combine the carrots, butter and minced shallot.
  • Season with the salt and pepper and pour in 1/3 cup water.
  • Cover tightly and cook over moderately low heat.
  • Stirring occasionally, until the carrots are tender, 20 to 25 minutes.
  • Add the honey and cook over moderatly high heat, stirring gently, until the carrots are hot and glazed, 1 to 2 minutes.

  3. This was so easy to prepare for our Easter dinner. I like the blend of flavors of the sweet carrots, shallots, and honey. This is a vary good glazed carrot recipe.
     
  4. Easy to prepare & quite tasty! I halved the recipe, with no problems and substituted regular margarine - no unsalted butter in the fridge - otherwise, I followed the recipe exactly. Thanx Becky!

My husband and I moved to Las Vegas after retirement in 2000. We lived in South Bend, IN for about 26 years. We both like to travel and we have taken up RV camping and enjoy it a lot. Most of our camping is done in Nevada Utah Arizona and So. California. During the summers our (almost) 9 year old Granddaughter will go with us sometimes. Our Daughter, Son-in-law, and Granddaughter have lived in Las Vegas since January 2001.
