- 4 boneless skinless chicken breast halves
- 236.59 ml white wine or 236.59 ml chicken broth
- 118.29 ml honey
- 29.58 ml lime juice
- 1.23 ml ground ginger
- 1.23 ml garlic powder
- 1.23 ml salt
- 1.23 ml pepper
directions
- In a large resealable bag, combine the wine or chicken broth, honey, lime juice and ginger and the chicken. Seal bag and turn to coat; refrigerate for 2 hours, turning once.
- Coat grill rack with cooking spray before starting the grill. Drain and discard marinade. Combine the garlic powder, salt and pepper; sprinkle on the chicken.
- Grill, uncovered, over medium heat for 6-7 minutes on each side or until juices run clear.
- You could also bake this in the oven at 375 degrees for 20-25 minutes.

The lime flavor in the marinade is wonderful in this recipe! I used thinly sliced chicken breast "cutlets", so I did reduce my grilling time. Made for a fabulously quick meal and a delicious one too. Next time I'll add a bit more seasoning before grilling the chicken.....I like it a bit spicier. Can't wait to have a yummy sandwich tomorrow at lunch with my leftovers! Thanks for sharing. What a lovely flavor this chicken had nemokitty. I marinaded the thick breasts for 2 hours and baked in the oven for 35 - 40 minutes. They were lovely, tender and juicy, with a really nice subtle flavor. Thanks for sharing a recipe that was quick and easy to make. I will try these on the grill next time, can't wait.

I scaled this back for 3 and my chicken breasts were large (nearly 300 grams each) and I cooked them in the frypan and they took nearly 40 minutes to cook through and in the last 10 minutes I put in 1/4 cup of the marinade which added a deep caramel colour to the chicken and a slight stickiness and bought out the flavours of the marinade, thank you nemokitty, made for 123 Hits tag game.

Wow!!! I was surprised with how much flavor this chicken had after only marinating it for 2 hours. I had 3 large, thick chicken breasts. I sliced the chicken in half so that they wouldn't be so thick to make them quicker to cook on the grill. I also tenderized them after slicing them in half. I used white wine and marinated them for 2 hours, seasoned them and then put them on the grill. I made these over at my in-laws along with Recipe #446471, Recipe #476070 and Recipe #467517. Made for PAC Spring 2012.
