  • Combine stuffing mix, 1/2 cup juice, water, pecans and butter. Let stand 5 minutes. Mound 1/2 cup stuffing on each breast. Wrap with bacon, twist and secure. Place in a greesed oven proof dish. Mix remaining juice and honey; spoon over chicken. Bake at 350 for 40 minutes.

  1. I cut this recipe in half for the 2 of us & then toasted the almonds before including them! I also flattened the 2 large chicken breasts to between 1/4 & 1/2 inch thick, then was able to roll the stuffing up inside! About 15 minutes before they were done baking, I sprinkled over the top of both breasts some home-dried breadcrumbs (not fine) from a hearty, nutty whole wheat bread! A great keeper of a recipe!
