Honey Soy Salmon

- 1 scallion, sliced fine
- 2 tablespoons reduced sodium soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon minced fresh ginger
- 1 lb center-cut salmon fillet
- 1 teaspoon toasted sesame seeds
directions
- Whisk scallion, soy sauce, vinegar, honey and ginger in a medium bowl until the honey is dissolved. Place salmon in a zip-top plastic bag, add 3 tablespoons of the sauce and refrigerate; let marinate for 15 minutes, turning at least once. Reserve the remaining sauce.
- Preheat broiler. Line a small baking pan with foil and coat with cooking spray. Transfer the salmon to the pan, skin-side down. (Discard the marinade in the bag.) Broil the salmon 4 to 6 inches from the heat source until cooked through, 6 to 10 minutes. Drizzle with the reserved sauce and garnish with sesame seeds.

A very nice way to prepare salmon. Great flavors. For the honey, I used Recipe #223086 (the lime variation) which added a hint of citrus to the marinade. I forgot the sesame seeds until after I had taken the photo, but added them at the table. Nice touch. Will be making this again. Very easy dish to make. Made for Heart Healthy Tag--February 2010

I prepared the marinade for salmon skewers; served with jasmine rice and some steamed baby bok choy. I fried the marinated skewers in a little oil for 3 or 4 minutes on each side and the fish was cooked perfectly! Loved the sweet/salty flavours of the marinade; a quick and easy recipe. I didn't have any sesame seeds to use as a garnish.
