Honeyed Asparagus Bundles

- 2 lemons
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- 2 tablespoons extra virgin olive oil
- 1 tablespoon fresh tarragon
- 2 lbs fresh asparagus, trimmed
- salt, to taste
- black pepper, to taste
directions
- Using channel knife, cut 8 strips from lemon peels. Juice lemons.
- In bowl, whisk together lemon juice, mustard and honey.
- Gradually whisk in olive oil. Stir in tarragon.
- Arrange asparagus into 8 piles. Using lemon-peel strips, tie asparagus piles into bundles.
- Set bundles in steamer basket over large saucepot of simmering water.
- Steam bundles 3 minutes, or until stalks are crisp tender.
- Using tongs, remove bundles from basket.
- Season with salt and black pepper, if desired.
- Drizzle with dressing.

I did cut this recipe in half, making 2 bundles for each of us & then followed the recipe on down, although when ready to serve, I did season it with lemon pepper rather than the usual S&P! A great way to serve this many times neglected vegetable! Thanks for sharing the recipe! [Made & reviewed in Went to the Market recipe tag]
