  1. In large saucepan, cook bacon. Remove to paper towels. Pour off all but 1 tablespoon of fat.
  2. Add onion, celery and garlic. Cook until soft. Add black eyed peas, chicken broth, cayenne and hot pepper sauce. Stir in rice.
  3. Simmer 20 minutes, or until rice is tender. Stir in bacon. Serve garnished with parsley.
