Hopple Popple German Breakfast Casserole

  • In a large electric skillet on medium high, combine potatoes (enough to cover the bottom of the pan about 1/2-inch deep), onion and butter; saute until slightly browned. Spread evenly in pan.
  • In a mixing bowl, combine eggs, milk and seasonings. Pour over potato mixture in pan.
  • Layer pepperoni over the top. Cover pan and cook on medium low for 10-15 minutes (eggs will be 'set'). {While that's cooking, prepare a simple fruit tray or salad.}.
  • Remove lid and sprinkle cheeses over; put lid back on, but turn off the heat. Let stand 2-3 minutes. [If you're having toast with this, make it now.].
  • Cut into wedges or squares and serve immediately.
  • Option: Fry Italian bulk pork (or turkey) sausage, drain fat, add to potatoes. Toss in a can of Ro-Tel tomatoes. OR try other cheeses!

  1. I have to agree wholeheartedly with Joyfull40. It is a huge stretch to call this German with the Italian seasonings, pepperoni and processed cheeses.

  1. We have Hoppel Poppel quite often. Can't say as I've ever seen, or heard of, using frozen hash browns, or peperoni, or italian seasoning, in a German breakfast dish.

  3. Yes, I also have a hard time believing this to be German. The changes (in my opinion) would be to: #1 change the hash browns to cooked, diced, and pan-fried yellow potatoes until golden or browned; #2 change the pepperoni to Westphalian (or other suitable) smoked & cured ham, or suitable mild breakfast sausage; #3 to change all of the recommendations of herbs & spices to a 1/2 tsp ground nutmeg plus 1/2 tsp anise seeds, and a pinch of caraway seeds. Fresh chives would be welcome depending on if they are in season or not; #4 NO PROCESSED CHEESE!!!.
     
  4. Since I was making this for Sunday brunch I decided to go the sausage route. It was very, very good. The only change I made was to use a whole med. onion. (We really like onion here.), and a bit of minced garlic. Glad I found this one. Thanks for the post.
     
  5. This was so easy, so fast and so delicious! I cut it down and made it just for one. I cooked it in a round pan on the stove and it came out perfectly. I did add only white cheese and some green onions on top! Thanks Debber for sharing your yummy recipe!

Tweaks

  1. To make this more of a German breakfast dish I would change the cheese to Gouda and the pepperoni to 4-8 oz of Goetta sausage. Then for the Hash-browns make German fried Potatoes. For herbs, I would use parsley, thyme ajaka basil & chives. This recipe helped as it's not many online I could find that were any different. I would have called this recipe an American German Influenced dish
