- 453.59 g horse meat
- 1 cleaned and washed tripe
- 226.79 g liver
- 1 beef heart
- 236.59 ml spinach
- 59.14 ml vegetable oil
- 2-3 onions
- salt or pepper
- 3-4 bay leaves
- 1 bunch fresh dill
- 4.92 ml paprika
- 2.46 ml cumin
- 473.18 ml broth
- fresh kale, for serving

- Cut the horse meat into serving sized pieces sautee until brown. Halfway through frying, add chopped onion, liver, heart, and continue frying. When done, pour 2 cups broth into the pot. Add washed tripe, bay leaves,.
- spinach, salt, pepper, paprika, dill, and cumin. Bring to a boil, then lower heat and cover. Let simmer for 1 hour. Stew should be thick.
- Remove bay leaves and serve over fresh kale.

I'm a huge fan of trying different recipes...even this one. I live in Texas so tripe isn't hard to find. Beef heart and horse meat however...totally different story. So I head to Central Market. Why? Last time I was there I noticed they had ground Ostrich meat so I figure they must have exotic meats right? Wrong! The lady behind the meat counter looked at me like I was crazy when I asked for two lbs of horse meat and 2 beef hearts ( I was planning on freezing the extra meat...in case my family loved the stew! Great idea Huh? ) She said I might want to try a specialty deli or Mexican butcher. At this point I pretty much gave up on the idea of making stew at all and just ordered Pizza. Oh well...
