  • Combine cheddar cheese with cream cheese in a medium bowl.
  • Add ½ cup walnuts and horseradish; mix until well blended.
  • Refrigerate about 20 minutes, or until easy to handle.
  • Shape mixture into log shape; roll in remaining ½ cup walnuts.
  • Wrap in plastic wrap that has been lightly greased.
  • Refrigerate until firm at least one hour.
  • Serve as a spread for crackers, I like ritz crackers.
