Horseradish Mustard

  • Mix both mustard seeds, 1/2 cup of the lager, and the red wine vinegar in a small bowl and let stand at room temperature for at least 2 hours.
  • Put the mixture in a blender or food processor, and add the remaining ingredients.
  • Process approximately 2 minutes, or to a coarse consistency.
  • Scrape the mixture into a small saucepan, and bring to a low simmer.
  • Simmer for 5-10 minutes, until it begins to thicken, but not quite as thick as a commercially prepared mustard.
  • Scrape it into a jar and let it cool.
  • If it seems to thick when its cooled, thin down with a teaspoon or so of beer or vinegar.

I've been married to the same great guy for 27 years now. We never had any children, but we have two cats, Otis & Milo. They are litter-mates, half Abyssinian/half tabby, and are my "baby boys"!:) I love to cook, and am an AVID recipe collector. I probably have more cookbooks than I'd like to admit, but I'm always on the look-out for something new and different to try. I also enjoy gardening and riding my bicycle during the summer months. Nothing like fresh tomatoes, peppers and herbs, straight out of the garden!:)
