  1. Bring broth, ginger, and garlic to a simmer.
  2. Add mushrooms, tofu, chicken, and bamboo shoots and simmer 5-10 minutes.
  3. Add soy sauce, vinegar, chili paste, and pepper.
  4. Mix cornstarch with a few tablespoons water to make a slurry. Stir into simmering soup.
  5. Beat eggs with 2 tablespoons water. Stir gently into simmering soup.
  6. When serving, garnish with chopped green onion.
