Ingredients: 2 lbs chicken breasts, boiled and cut up; 1 chopped onion; 1 (15 ounce) can chili beans; 1 (15 ounce) can black beans; 1 (15 ounce) can pinto beans; 1 (12 ounce) can white shoepeg corn; 2 (10 ounce) cans rotel (I use 1 mild and 1 original); 1 (1 1/4 ounce) package taco seasoning; 1 (1 ounce) package ranch dressing mix; 2 -4 cups water, depending on how thick you like it

Simmer for 2 hours.

<p>I have always loved to cook and try new recipes. I am a kindergarten teacher, but will be retiring at the end of the 2006-2007 year. I love having people over for special occasions and just to have supper with us. I have been married 35 years and have 3 daughters.
