Hot Chicken or Turkey Salad
"Posted in response to a request. This is my favorite dish to make with leftover turkey. (Can also use chicken.) The name says "Salad", but it's more of a casserole. Recipe has been in the family for years. Hope you try it and enjoy!"

- 1 1⁄2 cups Special K cereal
- 3 cups diced cooked turkey (or chicken)
- 1 cup finely cut celery (2 large stalks)
- 1⁄4 cup pitted black olives, chopped
- 3 tablespoons chopped pimiento
- 3 tablespoons finely chopped green onions
- 1⁄2 teaspoon salt
- 3⁄4 cup Miracle Whip
- 1 tablespoon melted butter
directions
- Crush cereal into coarse crumbs and set aside.
- Combine poultry, celery, olives, pimento, onions, salt and Miracle Whip, put into casserole.
- Combine cereal with melted butter and sprinkle over casserole.
- Bake uncovered at 400 degrees for 15 minutes.

I thought this was good, but I was the only one of my family of five. I made this hot. I think it need more flavor. I added 1 tsp. of worchs sauce. and since my DH doesn't like miracel whip I halfed it with mayo. I think i will add chopped red onion and add some garlic. I did like this dish cold too. I was tested it when before baking. I want to say thanks for allowing for appropriate prep. time. I find some receipes dont.
