Hot Curried Fruit

"Fabulous way to serve fruit that tastes almost like dessert. It is wonderful served with ham or pork - or even over vanilla ice cream! You can substitute other fruit to your taste but the cherries and bananas should always be used."

  • Drain all fruits and placed them in a 2 qt.
  • buttered baking dish.
  • Combine cornstarch, curry powder, cinnamon, and sugar in small bowl.
  • Sprinkle the sugar mixture over fruit.
  • Combine melted butter and brandy and pour over fruit.
  • Gently toss to coat all the fruit.
  • Bake at 350 degrees for 30 minutes.

  1. I couldn't find apricot halves so I substituted pineapple. It was fabulous! I made it with a pork roast - which is great. And I'm planning on making it with baked ham in the future. I think next time though - to make it a little more savory I will add a little more curry powder and a little less cinnamon. Thanks for a great one Candy!
     
  2. This is wonderful. I agree with the reviewer who suggested less sugar, but that's strictly a personal preference, not a criticism! I didn't have brandy, so used bourbon, and it was delicious. I think rum might be nice, too? I served this at a bridal brunch, and had several requests for the recipe. I emailed them this link, so you get credit, Candy! Thanks for a true winner!
     
  3. Oh wow! I didn't know that canned fruit could taste so good. This will be my new winter go-to recipe when I am in need of a fruit fix. It was very sweet - DH and I ended up saving it for dessert instead of eating it as a side. I would probably decrease the brown sugar if I intended to serve it as an actual side dish (not that it tastes bad as is). Also, I only used a 1/3 cup butter, and will probably decrease it to 1/4 cup next time, and maybe add some more brandy and/or fruit juice so that it doesn't dry out.

  5. Yummmmmmmmmmmm this was so good. Everyone raved about this delicious fruit dish, which I served as an accompaniment to roasted ham. I used Brown Sugar Splenda and all of the canned fruits were water packed versions,and that worked out very well.
