Hot Dog Soup

"This recipe, a kid pleaser, is from John Mitzewich at the About.com site. Kids have a natural affinity for hot dogs, and this stew has vegetables, too! Kids will also detect a mild pizza flavor which they will like. Using a plastic knife, they can even help cut up some of the ingredients, says Mitzewich. Note that this soup can be made for adult appetites by substituting Italian sausage for the hot dogs and adding more garlic and some onions and Italian flat-leaf parsley."

  • Melt butter in a Dutch oven and add hot dogs, sauteing them over medium heat to give color and bring out the flavor. Add the garlic, then the tomato puree.
  • To this mixture add: water, salt, pepper, Italian seasoning and sugar. Bring to a boil.
  • Add the potatoes and simmer 5 minutes.
  • Add the green beans, zucchini and red bell pepper. The About.com host demonstrated cutting the latter 2 vegetables into triangles. He laid the strip of vegetable at a slant and made a cut; this is the first side of the triangle. He then moved the strip in the other direction so that the next cut would complete the triangle. The angles will be approximately 45 degrees. After adding these vegetables, cover the pot and simmer 15-20 minutes or until vegetables are tender. Kids like their vegetables nice and soft.
