Hot 'n Hearty Potatoes

"A recipe from Hellman's which calls for "real" mayonnaise. Haven't tried it with any other type. I usually make this as a side for burgers and baked beans. Sometimes I substitute onion powder for onions as my family is picky about onions. Decrease salt if you'd like; amount below is given in the original recipe."

  • In large skillet over medium heat, cook onions in margarine 2-3 minutes.
  • Stir in mayonnaise, vinegar, sugar, salt, and pepper.
  • Stir with whisk until smooth.
  • Add potatoes; continue cooking, stirring constantly, about 2 minutes or until heated through (do not boil).
  • Garnish with parsley and bacon.

  1. This was a great side served with Recipe #138131. I cooked the potatoes too long, so they crumbled rather than sliced, but it was a happy accident, because they were great! I did leave out the bacon since I was having pork chops with it. I reheated leftovers with a burger and baked beans the next day. That's a great combo too! Thanks for sharing PugGrannie.
