- 1 lb hot Italian turkey sausage
- 1 small onion, diced
- 2 (10 ounce) cans Rotel tomatoes & chilies
- 1 (8 ounce) package neufchatel cheese
- 1 1⁄2 cups light sour cream
- 1⁄2 cup shredded cheddar cheese
- 1 teaspoon crushed red pepper flakes
- salt and pepper
directions
- Remove casings from turkey sausage links and brown in a skillet with diced onions and crushed red pepper flakes.
- Once turkey sausage is cooked through, drain fat from skillet.
- Drain both cans of Rotel and add to sausage and onions.
- Add cream cheese, sour cream, and shredded cheddar cheese to skillet and remove from heat once the cheese has melted and the mixture has combined.
- Season to taste with salt and pepper.
- Transfer to mini slow cooker to keep warm, and enjoy with thinly sliced baguette or tortilla chips.
