I made this up years ago for a quick meal usein regular potatoes and chicken useing simpley shredded hash browns now help a lot no more shedding and the fully cooked chicken in package is great to before I had to cook it first it made recipe harder then what it is and I HAD TO USE lots of spices to get THE FLAVORS RIGHT ON THE CHICKEN"

  • 2 (8 ounce) bags Simply Potatoes® Shredded Hash Browns
  • 1 (8 ounce) bag southwestern-seasoned chicken breast, any brand
  • 1 (8 ounce) bottle mild salsa, any brand
  • 1 (16 ounce) bag any brand Mexican blend cheese
  • 2 eggs, not scrambled

  • Spray fry pan with pam.
  • put hash browns in pan and cook on medium check for brown.
  • put chicken on top of first layer of hash browns.
  • pour 4 ounces of salsa on top of chicken.
  • layer 8 ounces of cheese on top of salsa.
  • put next bag of hash browns on top of salsa set in oven till top is brown on 350 for 30 min remove from oven and add 4 ounce of salsa on top of hash browns then next package of cheese crack 2 eggs next to each other on top of cheese put back in oven till eggs are done about 8 min ovens are not the same so keep checking it heres looking at ya cut in wedeges and serve.
