Cookie Crust mixture
- 1 1⁄2 cups flour
- 3 tablespoons sugar
- 3⁄4 cup butter
- 1⁄2 cup chopped pecans

Cream Cheese layer
- 8 ounces cream cheese
- 1 cup powdered sugar
- 1 cup Cool Whip

Vanilla layer
- 1 (3 1/2 ounce) box vanilla instant pudding mix
- 1 1⁄2 cups milk

Chocolate or pistachio layer
- 1 (3 1/2 ounce) box instant chocolate pudding mix or (3 1/2 ounce) box instant pistachio pudding mix
- 1 1⁄2 cups milk

Topping
- 1 cup Cool Whip
directions
- Mix ingredients for cookie crust. Spread onto bottom of 9x13" pan. Bake at 350F for 15 minutes. Cool.
- Blend together ingredients for cream cheese layer. Spread over cooled crust.
- Prepare vanilla pudding mix with 1 1/2 c milk according to package directions. Pour over cream cheese layer.
- Prepare chocolate or pistachio pudding with 1 1/2 c milk. Pour over vanilla layer.
- Top with cool whip.

Happily married for nearly four years, I have been a stay-at-home mom since my DD was born prematurely in January 2006. Since that time I have become more conscious of nutrition and the role it plays in every aspect of our lives. Our second DD was just born, and all is going well.
I try to make the majority of our food from scratch, adding in nutritional enhancers when I can. :) I discovered I love baking bread last winter, and have been trying heartier whole-grain recipes.
This summer we planted a huge garden (another first for me!) and I learned how to can. We are already looking forward to next year, as we learned so much (and have so much to change!) this summer about organic gardening.
