  1. Heat oven to 350°F.
  2. In bowl combine first 4 ingredients and beat on low with mixer until combined. Can also use food processor.
  3. Pat into bottom and slightly up the sides of a grease 9x13 baking pan. bake for 15 minutes or until golden.
  4. Remove from oven. (do not turn off) The dough will be soft and puffy. Immediately spoon the Lemon curd over the top and spread out to distribute evenly. (An offset spatula/spreader work great). Return to oven and bake another 15 minutes.
  5. Cool completely, then place in refrigerator for 15 minutes.
  6. Sprinkle with a little extra powdered sugar.
  7. Cut into 24 bars.
